Banana, Fig and Cashew Smoothie

I’m addicted to healthy smoothies. Especially this easy banana, fig and cashew smoothie.

One of the things I like about working offshore is the abundance of fruit, nuts and yoghurt onboard, all there ready for me. Pretty much all the ingredients I need for smoothie making! And thank god we have a blender. Although not exactly your flashiest kitchen appliance, it does the job and that’s all that matters.

Every day I have a banana, I love the naturally sweet taste of figs, and cashews are my all time favourite nut (so addictive), so why not throw them all in a blender?

My friends, it makes the most delicious, healthy and filling smoothie. Not the most fantastic colour, but it’s damn tasty, trust me.

I added low-fat Greek yoghurt for extra sustenance and honey-dew melon for sweetness.

Huge apologies for the quality of the photos. I don’t have my beloved Canon DSLR with me and it’s kind of tricky taking close-ups on a rolling boat!

Ingredients

(serves 1)

-1 banana, chopped
-3 dried figs, roughly chopped
-8 raw cashew nuts
-Large handful of honeydew melon pieces
-1 table spoon of low-fat Greek yoghurt
-1 cup of crushed ice

Simply throw all in a blender, blitz and enjoy!
