This really is the easiest recipe for a delicious Pea and Basil Soup. The ingredients are all incredibly healthy, so you can enjoy every bit of it knowing this comforting soup is entirely good for you.
To complete a wonderful vegetarian dinner, serve up as a starter with some warm, crusty bread followed by Aubergine Rolls with Ricotta & Spinach or this Mushroom & Asparagus Risotto dish.
Pea and Basil Soup
Ingredients
(serves 4)
4 cup peas, from frozen or fresh
1 large broccoli, broken in to florets
1 cup fresh basil leaves, torn
1 large onion, chopped
1 stalk celery, chopped
2 garlic cloves, chopped
4 cups vegetable broth
1/4 cup parmesan cheese, grated
Splash of olive oil
salt
pepper
Method
Heat olive oil in a large pot, and add the onion, celery, garlic. Stir over medium heat until soft and translucent. Add the peas, broccoli and stock to the pot. Bring to a boil.
Reduce the heat and add the basil, pinch of salt and pepper. Simmer for about 15 minutes. Use a hand blender to whizz it all up in to a smooth and deliciously creamy soup (or you can whizz it just briefly if you prefer a chunky soup).
Garnish with a sprinkle of grated parmesan cheese, extra pepper and fresh basil leaf.
