This is possibly the quickest and easiest healthy bean salad recipe there is. After a long day at work, I love just getting a big bowl and throwing together a mix of fresh pantry ingredients, drizzled with a delicious dressing.
This mixed bean salad is perfect because it involves no cooking and can be whipped up in about 5 minutes. A protein-rich, satisfying dish guaranteed to fill you up with minimal effort.
Serve as a side dish along with Aubergine Rolls or perhaps as a salad medley alongside this Quinoa & Roast Vegetables recipe.
Healthy Bean Salad Recipe
Ingredients
1 x tin red kidney beans, drained
1 x tin chickpeas/garbanzo beans, drained
1 x tin cannellini beans, drained
3 sticks celery, finely chopped
1/2 red onion, finely sliced
Handful cherry tomates, sliced
Handful flat-leaf parsley, finely chopped
Salt & pepper
Dressing
3 tbsp olive oil
1 tbsp apple cider vinegar
2 tsp wholegrain mustard
Method
Simply throw all salad ingredients in to a large serving bowl.
Shake up all dressing ingredients in a tight container, before drizzling over the salad. Enjoy!
