I can’t believe it’s taken me this long to discover berry & vanilla overnight oats. Now, I can’t imagine eating anything else for breakfast.
They are SO easy to make, SO insanely delicious and really do fill you up for hours and hours. I’m a terrible morning person, so knowing this bowl of goodness is waiting in the fridge when my alarm goes off actually makes me excited to spring out of bed.
I change up my overnight oats recipe with different toppings. This one is a wonderful combination of aromatic vanilla, sweet berries and crunchy seeds.
Another big favourite of mine is more nut-based, drizzled with this addictive almond & coconut butter, then topped with crunchy nuts – recipe coming soon!
I still sometimes have my big breakfast smoothie at the weekends, but during the week before work, this is a serious time saver.
The below ingredients are for 2 portions – 1/2 a portion of oats per person. I always make more so I have 2 days worth of breakfasts before making the next batch!
Berry & Vanilla Overnight Oats
Ingredients
(serves 2)
1 cup rolled oats
1 – 1 1/4 cup unsweetened almond milk (depending how runny you like it)
1 banana
Small handful mixed seeds (I love pumpkin and sunflower seeds)
1 tsp vanilla extract
Blueberries & raspberries for topping
1 tsp ground flaxseeds (optional)
1 tsp honey (optional)
Method
Mash up the banana in a tupperware/bowl and then mix in the oats.
Add the milk, seeds, honey, flaxseeds and vanilla extract.
Stir and leave overnight (or for a few hours) in the fridge.
Top with berries in the morning.
Repeat every morning!
